Double Chocolate Protein Muffins

While focusing on my performance during training for my recent marathon, I stepped back from sharing recipes. This liberalized some time to work on school, projects, and spend lots of time running. Besides, with my energy needs my diet became whatever I could eat to get enough in.

But now that my race is complete, I’m rebuilding some muscle and strength, and I’m on a 9 to 5 schedule for my dietetics practicum - what better time to get back into doing some recipe blogs? Inspired by what I’m preparing to fuel my busy life in these coming weeks; these protein-forward recipes will help bring some flavor and simplicity back to your weekly prep. 

This week’s recipe is a double chocolate protein muffin, inspired by a muffin I tried at a local cafe the other week. It was moist and filled with a dark chocolate richness that I knew would be a challenge to recreate with a protein boost.  

You’ll see in this recipe I used applesauce to bring in the moisture while keeping the protein density up and aimed to use unflavored protein powder so the chocolate taste could stand out instead of being overtaken by an artificially-flavored whey. 

If you want a higher protein-to-energy ratio, simply remove the chocolate chips and use a chocolate-flavored whey protein powder to work.  


Ingredients (10 muffins): 

  • 150 g all-purpose flour  

  • 80 g unflavored protein powder  

  • 30 g cocoa powder  

  • 2 tsp baking powder  

  • 250 g unsweetened applesauce  

  • 2 whole eggs  

  • 15g oil 

  • 100 mL milk  

  • 60 g dark chocolate chips  

Optional: 

  • pumpkin seeds or walnuts on top 


Method:  

  • Mix the dry ingredients.  

  • Separately, mix the wet ingredients.  

  • Combine slowly. 

  • Add milk if needed until batter is thick but scoopable.  

  • Make it rain chocolate chips.  

  • Bake at 350°F for 18–22 min or until it passes the toothpick test. 

    • Tip! Want a more risen dome? Try baking at a 425°F for 3-5 minutes, then bringing the heat down to 350°F and finishing the muffins off for 13-15 minutes.
